One cup of cauliflower has 25 calories and 1-2 carbs as compared to white rice that has 220 calories and 45 grams of carbs per cup. You can purchase them frozen in your local supermarket. Many supermarkets including Costco sell fresh zucchini and fresh cauliflower already prepared to resemble rice or even mashed potatoes.  These new products include:
